In reply to Jen. No I just cooked the roast with roast spices and onion etc. Vegetables will overcook, I mean potatoes and carrots.

Seems like an easy and delicious recipe. I do have an instant pot -what’s the recommendation for settings and how long should I set it for?

This is BY FAR the BEST roast I’ve ever made. I wouldn’t change a thing about this recipe. The au jus is absolutely delicious. So easy & love that searing the meat is not necessary which saves time & no extra mess. Per the recipe side notes, I did cook on high setting for 6 hours (leaving the veggies quite large) because I started it late in the day. Everything was cooked perfect & tender. I’ve decided this is what I’ll be making for the upcoming holidays. I wish every new recipe I tried turned out this good!

This was super good. It was so easy to prepare I love crockpot recipes! I served it as is and everyone loved it. Next time I would probably add extra veggies but I thought it was perfect as is. Will definitely be making again!
