  • Roast: Beef sirloin tip roast aka round tip roast, ball tip roast, crescent roast, knuckle roast, beef tip roast and beef round sirloin tip roast. About 3 pounds and boneless.
  • Onion: White onion, sliced for aromatic flavor.
  • Spice rub: Ground coffee (regular or decaf), smoked paprika, brown sugar, chili powder, lemon zest, salt and pepper.

Recipe Tip

If you do not love coffee flavor, I recommend to use this pot roast seasoning or all purpose seasoning at a rate of 1 tablespoon of seasoning per 1 pound of roast.

How to Cook Sirloin Tip Roast

Here is an overview how to cook sirloin tip roast. Full recipe card is located below.

Before you begin, you want to take your roast out of the fridge and let it sit for about an hour. This will bring it to room temperature, which will result in even roasting!

Step by step process how to cook sirloin tip roast.
  • Prep: Preheat the oven and spread sliced onions evenly across the bottom of the Dutch oven or roasting pan.
  • Mix dry rub: In a small bowl, mix coffee, smoked paprika, brown sugar, chili powder, salt, pepper, and lemon zest.
  • Coat the roast: Place whole roast on a plate and sprinkle dry rub over entire roast, starting with the fat side down. Press into it, making sure it sticks to the meat on both sides. Transfer on top of onions and sprinkle with remaining seasoning.
  • Bake uncovered: At first you’ll bake roast uncovered at a higher temperature. Because we’re not browning the meat or searing it first, this will help keep in the juices. Then reduce the heat, cover with the lid and roast until 10 degrees before your desired internal temperature is reached.
  • Rest and slice: Remove roast from the oven and let it rest covered for 20 minutes. Then transfer roasted sirloin tip to a cutting board and grab a very sharp fillet knife. Cut off the twine and slice against the grain.

How Long to Cook Sirloin Tip Roast?

How long to cook sirloin tip roast depends on how you like your meat done. I have put together a handy time table to consult.

If you haven’t done so already, I highly recommend you invest in a meat thermometer. People have come up with tips and tricks to eyeballing when roast is ready, but nothing beats the real thing.

Tips for Best Results

  • Ovens vary a lot: I have two ovens and one bakes hotter than the other. So start checking your roast at the 30-minute mark.
  • To avoid overcooking: Roast until 10 degrees below your desired internal temperature as per table above. This is because it will continue cooking just a bit even out of the oven. Removing it just before your level of doneness is a trick to use to avoid overcooking your roast.
  • The convection oven cooks faster: Keep this in mind for sure.
  • Cook on the middle rack: No matter what oven you’re using, cook on the middle oven rack. That way there is even distribution to the pan.

This recipe for sirloin tip roast can be adapted to your taste and what you have in the kitchen.

  • No Dutch oven? I think the best way to cook this roast is in a Dutch oven. However, you can use roaster with a lid. If you use a roasting pan and cover it with aluminum foil, I suspect it will take longer to cook. I highly recommend checking with an instant read thermometer for internal temperature after 30 minutes.
  • Orange instead of lemon: I can see how nice of a variation it can be.
  • Onion: I absolutely love white onion because it is sweet and has a crunch to it even after you are done cooking a sirloin tip roast. You can use yellow onion or red onion as well.
  • Grandma’s pot roast: For a Sunday dinner feel, cook roast with potatoes, carrots, and onions and watch everything roast and caramelize together. Cut vegetables into larger chunks to accommodate the longer cooking time. Baby potatoes could be used vs. thick sliced potato chunks. Pearl onions could be used in place of sliced onion.
  • Different dry rub: Try olive oil, garlic, and rosemary, or other herbs. Simple salt and pepper will also work. Or coat beef with pot roast seasoning or all purpose seasoning instead.
  • Turn your au jus into gravy: Add beef stock or red wine, cornstarch and other seasonings to taste to thicken up the juice.
  • French dip: Save your leftover juices. When you make a roast sandwich the next day, serve it in a soft bun and dip it right in the au jus.

Sirloin tip beef roast often gets labeled as a tougher cut of meat. This is due to the beef coming from the hindquarter of the cow where the muscles are used more often for movement.

It’s best for this cut of beef to be cooked low and slow to help break down the connective muscle fibers. The results are then a tender cut of meat!

What is the difference between sirloin tip roast and sirloin roast?

Sirloin tip roast comes from the hindquarter or rump of a cow. This cut of meat can be tougher, as the cow has large muscles for movement located here.

Sirloin roast aka top sirloin is located at the top of the sirloin section of the cow. When in doubt at the grocery store, ask your butcher.

What other roast can I use instead?

If you can’t find sirloin tip roast at the store, you can use chuck roast or eye of round roast instead.

Can I make this recipe in a slow cooker?

Yes. First of all, check out my slow cooker sirloin tip roast recipe first. But if you like the flavoring in this recipe, I recommend to brown the meat on the stovetop first, then proceed with the rub. Layer onions at the bottom of slow cooker, place roast on top of onions and add 1 cup of beef broth. Cook on low heat for 8-10 hours.

Can I make it in Instant Pot?

Yes. Sear the roast first on Saute mode with olive oil, then remove and rub it with the spice mixture. Next, saute the onions with olive oil. Deglaze your pressure cooker with broth or wine, put roast back in, add 1-2 cups of water or beef broth and pressure cook for 30 minutes per pound, similar to Instant Pot pot roast. Wait 10-15 minutes before using natural release.

  • Remove roast and let it sit at room temperature for 45-60 minutes before cooking.
  • Preheat oven to 450 degrees F. On the bottom of large Dutch oven or roasting pan spread onion slices. Set aside.

  • Then reduce heat to 325 degrees F, cover with lid and bake for another 30-40 minutes, or until internal read thermometer reads 10 degrees BEFORE your desired doneness T:
    °Rare: 120-125 F internal temperature. Red and bloody.
    °Medium rare: 130-135 F internal temperature. Pink center with brown towards the outside.
    °Medium: 140 F internal temperature. Barely pink center with brown to the outside.
    °Well done: 150-160 F internal temperature. Brown all the way through.
    Example, my 3 lbs roast was cooked to 135 degrees F when I checked on it after 35 minutes of baking covered (total cook time 65 minutes). I would start checking after 30 minutes cooking covered and remember all ovens bake differently!
  • Remove roast from the oven and let rest covered for 20 minutes. Transfer to a cutting board, remove twine and slice against the grain using sharp fillet knife.
  • Serve with its juices and onions from the bottom of the pan, mashed potatoes and a simple salad like cucumber and tomato salad.

A big bowl of ground turkey stew always hits the spot on a chilly day. And while most traditional stews use plenty of potatoes, I left them out to create a lighter version with tender cannellini beans. It’s unique but so good!

It’s one of our favorite ground turkey recipes I’ve been making since 2014. I took some new photos, added a bit more beans, kept the flavors pretty much the same, and we still love it!

This ground turkey stew recipe is filled with Mediterranean flavors and made with wholesome, simple ingredients.

  • Onion and garlic: Finely chopped onion and freshly minced garlic add aromatics and flavor.
  • Oil: Extra virgin olive oil for sautéing.
  • Ground turkey: Extra lean ground turkey is a lighter, tasty replacement for ground beef.
  • Diced tomatoes: They add chunks of tomato and flavor. I am using a can of low sodium tomatoes, if yours is not low sodium then use less salt.
  • Cannellini beans: This creamy white bean adds protein, flavor, and texture. You’ll need 2 cans of low sodium cannellini beans, rinsed and drained. Also cooking dried beans at home is very easy and saves money.
  • Chicken broth: Choose low sodium chicken broth to prevent a salty stew.
  • Kale: I prefer to use green kale because it adds more volume, but dinosaur (lacinato) kale works.
  • Olives: Any pitted olives. I use stuffed with garlic green olives because that’s what I had on hand.
  • Italian seasoning: You can make your own or use a store-bought package.
  • Other seasoning: Salt, pepper, and bay leaves.
  • Lemon juice: A splash of lemon juice adds bright flavor.
  • Fresh herbs: I used equal parts of fresh basil and fresh parsley.

How to Make Stew with Ground Turkey

Here’s an overview of how to make the easiest stovetop ground turkey stew, it practically cooks itself.

  • Sauté onion and garlic: Start by preheating a large Dutch oven on medium heat. Add oil, onion, and garlic then sauté until onions are translucent, about 5 minutes.
  • Cook ground turkey: In the same pot, cook ground turkey for 4-5 minutes. Use a spatula or wooden spoon to stir and break the meat into small pieces.
  • Season turkey: Add Italian seasoning and cook for 30 seconds.
  • Make the broth: Pour in the diced tomatoes, beans, and chicken broth. Sprinkle with salt and pepper, add bay leaves, then stir and bring to a boil.
  • Simmer: Once the stew comes to a boil, reduce heat to low, cover, and let it simmer for 20 minutes.
  • Add remaining ingredients: Turn off heat and add kale, olives and lemon juice. Give it a stir, cover, and allow it to rest until the kale is wilted.
  • Garnish: Add basil and parsley, stir again and let it stand for 5-10 minutes to let flavors “marry” each other.
  • Serve: Remove bay leaves and snuggle up with a hot bowl of stew.

Follow these easy tips and everyone will rave how great this unique stew is.

  • Be sure to remove kale stems: The stems are tough and chewy, it’s best to de-stem the leaves or buy pre-chopped kale.
  • Rinse and drain the beans: Too much liquid will thin your stew, and both flavor and texture improves when canned beans are rinsed and drained.
  • Break ground turkey into small pieces: Smaller chunks of ground turkey will incorporate evenly throughout the dish.
  • If you don’t have a Dutch oven: Use a heavy bottom pot with a tight fitting lid.

Here are some optional variations and add-ins you could try:

  • Use different ground meat: Tweak the recipe by using ground chicken or ground pork. You could also try ground beef.
  • Try other beans: Substitute cannellini beans with white navy beans, Great Northern beans, or butter beans. If you’re out of white beans, red kidney beans would also work.
  • Swap the broth: Use vegetable broth instead of chicken broth, or beef broth if trying ground beef.
  • Change up the tomatoes: Fire roasted tomatoes would give the stew a smoky taste.
  • Use leftover holiday turkey: Toss in some shredded turkey at the same time as adding the kale and olives.
  • Add tomato paste: This will add another layer of flavor. Add 3 tablespoons of tomato paste, and mix with cooked ground turkey.
  • Play around with consistency: Add some other veggies for a thicker stew. For a looser stew, add more broth and fewer beans.

Can I Make This Stew Vegetarian?

Yes, just omit ground turkey. There are already two cans of beans, but you can always add tofu crumbles or any vegetarian meat substitute and sauté it with onions.

Be sure to use vegetable broth as well.

How Do I Serve Mediterranean Turkey Stew?

I enjoyed it with chopped fresh tomatoes on top and a slice of toasted sourdough bread spread with butter. Any crusty bread like a baguette would be great to soak up the juices. I even say it’s a must!

You can also sprinkle crumbled feta cheese or goat cheese, and freshly grated Parmesan cheese on top of stew in each individual bowl.

Could also serve with a simple spring mix salad or butter lettuce salad for a soup and salad combo.

How to Store and Reheat

Store: Leftovers can be stored in an airtight container and refrigerated for 5 days.

Freeze: You can freeze it for up to 3 months in an airtight container. Kale might be a bit more limpy once thawed but it’s not that bad.

Reheat: The best way to reheat your turkey stew is on the stove on low heat while covered.

FAQs

Can I replace kale with spinach?

You can use spinach instead of kale. I recommend to stir it in and not let it stew and sit covered for 10 minutes like with kale because spinach will become wilted like in wilted spinach salad, unless you love that texture in a stew. Stir and serve.

Can I make this stew in slow cooker?

Yes, you can make this stew in a crockpot. Sauté onion and veggies and transfer to a large slow cooker with remaining ingredients. Cook on low heat for 4 to 5 hours or on high heat for 2 to 3 hours.

What else can I add?

You can also add sun-dried tomatoes, sautéed brown mushrooms, celery, carrots, peas, green beans, or eggplant to this ground turkey stew.

  • Preheat: Press the Sauté button and wait until the display says Hot, it takes a few minutes but you want it to be Hot before adding anything to it.

These easy tips help make this the best Instant Pot lasagna soup! It will jump up to the number one spot of your soup recipes list.

  • Separate lasagna noodles: After adding all ingredients, give it a gentle stir. You want the pasta submerged in liquid, so it cooks evenly but separated. This way it won’t stick while cooking.
  • To thin out the soup: It’s normal for soup to thicken as it sits and especially the next day. Thin it out only with broth to avoid diluting the flavor with water. I added 2 cups more in a few hours. You can also season it more with Italian seasoning, salt and pepper.
  • Don’t release pressure immediately: Don’t do Quick Release. Wait 5 minutes, otherwise soup will splatter a lot through the venting valve.
  • Let it stand: Just for 10-15 minutes to let flavors marry each other.

What Are the Best Noodles to Use?

You can use any wavy lasagna noodles. This time I used regular pasta.

Whole wheat lasagna noodles or Kamut noodles can be used, I would cook soup for 4 minutes then.

For brown rice or gluten-free lasagna noodles, you’ll want to pressure cook soup for 2 minutes. Also they will fall apart a bit more.

You could also use other short noodles like farfalle (bowtie pasta) and penne pasta.

Recipe Tip

For a thicker soup, add more lasagna noodles, about 9-10 sheets. I used 8 noodles broken into pieces.

We love this twist on lasagna, it’s super versatile too. Here are some fun variations to try.

  • Add veggies: Load up soup with vegetables and feel good about serving your family one of healthy Instant Pot recipes. 2-3 cups of chopped zucchini, carrots, celery, mushrooms, or bell peppers are just a few ideas.
  • Use ground turkey: Make soup healthier by swapping beef for ground turkey. You could even use ground chicken. Don’t forget to use oil for sauteing the meat then.
  • Add Italian sausage: Use half ground Italian sausage and half ground beef. There is the possibility you would have to drain some fat.
  • Stir in cheeses in the pot: Get more cheesy and creamy taste by slowly mixing in up to 1-2 cups of freshly shredded mozzarella cheese or ricotta cheese.
  • Make it dairy-free: Omit Parmesan cheese and top with dairy-free ricotta cheese.

It’s all about the toppings! I like to keep things simple and use what I have on hand. You can add all or any of these ingredients on top to add flavor to the soup:

  • Ricotta cheese: My personal favorite, I love the rich creaminess.
  • Parmesan cheese: Shaved or grated parmesan cheese is always a popular choice for Italian dishes.
  • Mozzarella cheese: For a mild, salty taste plus it melts into gooey deliciousness.
  • Fresh herbs: Add extra flavor and make your soup beautiful with parsley or basil.

How to Store and Reheat

Store: Refrigerate soup leftovers for 2 days. Technically it can last for 3-4 days but I find pasta becomes too soggy after 2 days.

Reheat: In a microwave or small pot on the stove. You can also reheat right in Instant Pot on Sauté mode if you are planning to consume all the leftovers. It’s best practice to reheat only what you will eat.

Freeze: I don’t recommend to freeze this soup as noodles become mushy once thawed.

FAQs

Will stirring the soup ingredients cause the Burn message?

No. With majority of Instant Pot recipes I recommend not to stir the ingredients to avoid Burn message. It doesn’t matter with this soup since there is a lot of liquid.

Can I double the recipe?

You can double the recipe in an 8 quart or 10 quart Instant Pot. No change in cook time. A 6 quart Instant Pot is too small for a double batch of this soup.

Can I make it vegetarian?

Yes. For vegetarian lasagna soup, omit meat, add 15 ounces can of rinsed and drained cannellini beans, and be sure to use vegetarian friendly Parmesan cheese.

  • Press Saute and wait until Instant Pot says Hot. Swirl oil to coat and add onion, garlic and ground beef. Saute for 7-10 minutes, stirring often and breaking meat into small pieces. Meat should not be browned. Press Cancel.

I have updated this reader favorite chicken lentil casserole recipe to make it better! The flavors are all the same but I have shortened the list of ingredients to make things easy for you. Also lentils come out more firm and casserole is less watery! Hooray!

The list of ingredients might seem long but really they are mostly spices that repeat themselves. I just broke down the chicken and lentils casserole recipe nicely for you.

Chicken breasts, green lentils, corn, cheese, broth, garlic, diced tomatoes, onion, bell peppers, diced green chilies, cilantro, taco seasoning, cumin, salt and pepper.
  • Green lentils: Uncooked lentils will need to be rinsed and drained. Brown lentils are the best substitute if you do not have green lentils.
  • Chicken broth: I wanted to add lots of flavor, so I used low sodium chicken broth instead of water. Vegetable broth would work great too.
  • Chicken: I like using boneless skinless chicken breasts, but chicken thighs work just as well. You’ll want to chop them into bite size pieces.
  • Aromatics: Fresh garlic cloves and onion.
  • Bell peppers: You’ll need 2 large peppers chopped. I had yellow pepper and red bell pepper on hand, use what you have.
  • Diced tomatoes: Canned diced tomatoes helps create the sauce while adding acidity and texture. I always recommend low sodium to help control sodium levels.
  • Corn: Frozen corn or corn drained from a can.
  • Green chilies: A small 4 ounces can of diced green chilies for a touch of heat.
  • Cheese: Shredded Tex Mex or Colby Jack cheese.
  • Spices: A combination of cumin, taco seasoning, salt, and pepper gives this dish its Tex Mex flavor.
  • Oil: You’ll need a bit of oil for sautéing the vegetables and chicken, olive oil or avocado oil are my go-to.
  • Cilantro: Optional garnish, but fresh cilantro adds the perfect pop of color and flavor.

Here’s a quick overview how to make this chicken lentil casserole. Cook lentils, sauté chicken and veggies, combine and bake. It’s very simple!

Step by step process how to cook lentils and chicken for the casserole.
  • Cook lentils: To a medium pot, add lentils, chicken broth and salt. Bring to a boil then reduce heat and simmer covered for 20 minutes. Set aside.
  • Cook chicken: While your lentils simmer, heat a large skillet on high heat and add oil to coat. Next, add cubed chicken, cumin, taco seasoning, salt, pepper, and cook for 6-7 minutes. Halfway through, drain liquid into a large bowl. Then transfer browned chicken into the same large bowl and set aside.
  • Prep your oven: Preheat oven to 375 F.
Step by step process how to mix and bake chicken and lentils casserole with cheese.
  • Sauté vegetables: Heat the same skillet on medium high heat and add oil. Sauté onion, garlic, and bell peppers with taco seasoning, cumin, and salt for 5-7 minutes or until golden brown. Stir occasionally to prevent burning.
  • Combine: Transfer sautéed veggies to the bowl with chicken, then add cooked lentils, diced tomatoes, corn, 1/2 cup cheese, diced green chilies, taco seasoning and 1/2 cup cilantro. Mix gently with a spatula.
  • Bake: Pour the mixture into a 9 x 13 baking dish and gently press until leveled. Place in the oven uncovered for 30 minutes. Remove from oven, sprinkle with cheese, and bake for another 10 minutes until cheese has melted.
  • Rest and serve: Cover casserole with foil and let it stand for 30 minutes. Garnish with cilantro and serve.

Tips for Best Results

Here are some tips I’ve learned from my many, many times of making chicken and lentils.

  • Pre-cooking lentils: Rinse them first and do not soak. We want to cook them but not completely, so they still soak up the liquid and flavors during baking as a casserole. After pre cooking, lentils should still be firm and if there is any liquid at the bottom of the pot, drain it.
  • Save liquid from chicken: During sautéing most store-bought chicken releases water, some more and some less. Drain it into the bowl in which you will be mixing all casserole ingredients and keep cooking chicken until it is a little bit golden brown. Your chicken will be full of flavor!
  • If using other lentils: The baking time and texture can vary, so keep an eye on the casserole.
  • Bake uncovered: Leaving your casserole uncovered allows the steam to escape and therefore less liquid, you don’t want your casserole soupy. Baking uncovered also promotes browning and crisping.
  • Let casserole stand before slicing: Really you could eat it right away but it’s not ideal. You want your casserole to sit, the ingredients to marry each other and soak up the juices. Then it’s the best!

What Are the Best Lentils to Use?

You can use green lentils or brown lentils, they are similar with a few differences. Green lentils have a slightly more peppery flavor and retain their shape when cooking, making them perfect for this recipe. However brown lentils work too, they contain slightly higher levels of fiber, have an earthy taste, and need less time to cook.

You can also use French lentils or Puy lentils. French lentils are a variety of green lentils that are smaller in size with a darker hue, and have a nutty and peppery, slightly earthy flavor. They hold their shape better than any other type of lentil and don’t turn to mush.

Then you have Puy lentils which are French lentils grown in the Puy region of central France. Because they are grown in a distinct place the taste is more peppery.

You can also use red lentils but casserole will come out more mushy as red lentils fall apart more. I also recommend to pre-cook red lentils only for 10 minutes.

Variations

Here are some creative ways to make this casserole your own.

  • Other vegetables: Sauté mushrooms and zucchini with the bell peppers. You could also add right into the casserole as a mix-in up to 1 cup of chopped cauliflower, broccoli, eggplant, sweet potato, peas, green beans or celery.
  • Add leafy greens: Spinach, kale, collard greens, or Swiss chard.
  • Make vegetarian: Omit chicken and use vegetable broth for a deliciously filling vegetarian recipe.
  • Use other spices: Instead of taco seasoning use chili powder to taste or cayenne pepper for more heat.
  • Omit diced green chilies: Use chopped seeded jalapeno or poblano peppers instead, or omit and use more dried spices with heat.
  • If not a fan of cilantro: I love cilantro but I know it’s not for everyone, you can omit or use fresh parsley instead.
  • Lime: Squeeze lime juice on top of finished casserole for an extra burst of flavor.

What Goes Well with Chicken and Lentils?

Casseroles are thought to be an all-in-one-meal, but there are tons of perfect side dishes to serve alongside it.

Can I Make It Ahead?

Yes, you can make it ahead of time and store in the fridge or freezer.

1-2 days ahead: You can keep casserole mixture in a bowl or in a baking dish covered with plastic wrap in the fridge for up to 24 hours. Bring to room temperature for 30 minutes on a counter, then bake as per recipe.

As a freezer meal: Assemble, tightly wrap with plastic and then foil, and freeze for up to 3 months. Thaw in the fridge overnight and bake as per instructions plus 5 minutes.

How to Store

Store: Transfer cooled leftovers to an airtight container and store in the refrigerator for up to 3 days.

Do I have to soak the lentils?

No, you don’t have to soak the lentils. In fact, you need to use unsoaked lentils for this recipe. If you soak the lentils, the liquid ratio and cooking time will be off.

Should lentils be firm or soft after pre-cooking?

Lentils should be a bit firm, they shouldn’t be fully cooked.

What if there is any excess liquid with lentils?

There shouldn’t be much liquid left after cooking the lentils but if any, drain it.

Can I use cooked lentils or leftover lentils?

Yes, feel free to use store-bought cooked lentils or canned lentils (drained), or any leftovers work too. You will need about 3 – 3.5 cups cooked lentils.

  • Instant Pot: Freeze all ingredients (minus chicken broth, tahini and herbs) in a gallon size resealable plastic bag. Cook from frozen with 2 cups chicken broth on High pressure for 20 minutes. Quick release.
  • Slow cooker: Thaw in the fridge for 24 hours before cooking. Cook with 2 cups chicken broth on Low for 8 hours or on High for 4 hours.

What can I use instead of chickpeas?

Cannellini beans are the best substitute for chickpeas.

  • Easy: You will skip turning on the oven, stove and washing a few bowls. You mix, cook, slice and serve entire dinner in same 2 pans in your Instant Pot! You can even refrigerate leftovers in the same 2 pans. And then reheat them in the same 2 pans in Instant Pot.
  • Juicy meatloaf: Meatloaf can be made with any ground meat and it always comes out juicy thanks to captured steam inside.

Ingredients for Instant Pot Meatloaf and Mashed Potatoes

There are two parts to the ingredients for this Instant Pot meatloaf recipe – for meatloaf and for mashed potatoes.

Potatoes, ground turkey, milk, butter, egg, ketchup, spices and balsamic vinegar.

For the meatloaf you will need:

  • Ground meat: Use ground beef, ground chicken, ground pork or ground turkey like me. It turns out delicious either way. For red meat, I recommend to go for extra lean ground beef or ground pork.
  • Egg: For binding meatloaf ingredients. You can try to replace it with one flax egg or chia egg.
  • Oats: We use oats in place of breadcrumbs (forgot to picture it). I like to use rolled oats but you can also use quick oats, quick cooking steel cut oats or even steel cut oats. You can use equal amount of regular breadcrumbs or panko breadcrumbs as well.
  • Garlic powder: To add flavor. Onion powder works just as well.
  • Dried oregano: For more flavor. Also use your favorite dried herbs like dried thyme, dried basil or Italian seasoning.
  • Salt and pepper
  • Ketchup: For the glaze. I like to keep meatloaf recipe simple and it turns out delicious!

For the mashed potatoes you will need:

  • Potatoes: Yukon gold potatoes or red potatoes are the best choice for mashed potatoes since you don’t have to peel them, just cut into large chunks. You can also use russet potatoes but be sure to peel first.
  • Water: Cold water to cook the potatoes in.
  • Milk: Classic ingredient to make mashed potatoes creamy. I use whole milk but any milk works.
  • Butter: To add another layer of flavor and creaminess to the potatoes. You can also use ghee.
  • Salt and pepper

How to Make Instant Pot Meatloaf

To cook meatloaf and mashed potatoes in the Instant Pot, I’m using these two stainless steel pans. They are stackable, fit 6 quart and 8 quart Instant Pots and you can buy them on Amazon.

But don’t worry, if you don’t have them, below I share how to cook meatloaf with tin foil.

While this Instant Pot meatloaf recipe might seem hard and labor intensive, I assure you it’s one of the easiest Instant Pot recipes! There is also detailed recipe card with video below.

Step by step process how to prepare instant pot meatloaf and potatoes for cooking.
  • Prep the potatoes: To the bottom pan, add chopped into large pieces potatoes and cold water.
  • Prep the meatloaf: To the top pan, add ground meat of choice, egg, oats and spices. Mix with your hands and shape meat mixture into oval or round shape. Do not add water.
  • Close and stack the pans: Stack the pans with meatloaf on top, making sure the lids cover them tightly. Then secure the easy-lift handle around them.
Step by step process how to cook instant pot meatloaf and mashed potatoes in electric pressure cooker.
  • Cook meatloaf and potatoes: Into 6 quart or 8 quart Instant Pot, add 1 cup cold water. Pressure cook on High Pressure for 25 minutes. You will either press Manual or Pressure Cook button. After release pressure right away, called Quick Release, by turning the valve to Venting position.
  • Open the pans: They are hot and full of steam, so do it carefully wearing the oven mitts.
  • Bottom pan with potatoes: Drain water. Add butter, milk, salt and pepper and mash the potatoes with a potato masher.
  • Top pan with meatloaf: Squirt some ketchup on top and spread with a mini spatula or pastry brush.

That’s it! Your Instant Pot meatloaf and mashed potatoes are ready! As an option, you can place the meatloaf on a baking sheet and broil under the oven’s broiler to brown the top.

Tips for Best Results

  • Do not overwork the meat: When mixing the meat mixture, mix just enough to combine. Otherwise, your meatloaf might turn out tough and rubbery.
  • If you would like to use 2 pounds of meat: The question I get asked the most about this Instant Pot meatloaf recipe. I would recommend to shape it into a round shape instead of oval shape to make sure it cooks through. Pressure cooking time will not change.
  • To cut recipe in half: Cut all ingredients in half but keep same cooking time. Just use same 1 cup of cold water added to the bottom of pressure cooker.
  • With 3 quart Instant Pot: You will need to use smaller mini pans or the foil method. Use half the amount of ingredients, keeping the same cook time.
  • If using ground beef or pork: If the meat you use is not lean, I recommend to drain the extra fat from the pan after cooking the meatloaf.

Can I Make Meatloaf in Instant Pot Using Foil?

If you do not have or do not wish to buy stainless steel pans, you can use aluminum foil to cook meatloaf and potatoes in Instant Pot. You will create “a pan” for the meatloaf to place on top of the potatoes.

  • Place trivet on top: Then put trivet that came with Instant Pot on top of the potatoes. Doesn’t matter if it has handles or not.
  • Shape meatloaf in a foil “pan”: Mix and form meat mixture into an oval meatloaf on top of double layered foil and then shape foil into “a bowl”.
  • Pressure cook: Cook as per recipe.

Recipe Tip

If you prefer not to cook with foil for health reasons, you can use an oven proof baking pan or stainless steel bowl that fits your Instant Pot for the meatloaf. It does not have to be covered. A few readers have successfully tested this method.

What to Serve with Meatloaf and Mashed Potatoes?

While this is a one pot dinner, adding a few colorful vegetable side dishes is always a good idea!

Try to serve meatloaf and potatoes with quick and simple garlic green beans, sauteed broccoli or Instant Pot steamed vegetables (make them in 3 minutes after cooking the meatloaf).

As for the salad, I think this arugula feta salad, cucumber tomato feta salad or bell pepper salad with pair nicely.

If you have time, try your hand in making Ukrainian garlic bread.

How to Store and Reheat

Store: Refrigerate leftovers in the same pans you cooked meatloaf and potatoes in for up to 2 days. Or transfer them into two separate airtight containers.

I personally find that mashed potatoes do not taste fresh after 2 days but you can store them another 1-2 days, if you wish.

Reheat: I recommend to slice leftover meatloaf for even reheating. To reheat, pop covered stainless steel pans into the Instant Pot, add 1 cup water and press Pressure Cook or Manual button for 1 minute.

Or reheat in a microwave for 2 minutes, check back and see if it needs more time.

FAQs

How do I know my Instant Pot meatloaf is ready?

The best way to know if your meatloaf is ready, is to insert an instant read meat thermometer into the thickest part of the meatloaf. If it registers at least 155 degrees F, your meatloaf is ready. Meatloaf will continue cooking with residual heat while you apply the ketchup glaze and mash the potatoes, and reach recommended as per USDA safe for consumption internal temperature of 160 F.

Can I double the recipe?

If using stackable pans, you could double the meatloaf amount but not the potatoes because they will not fit into the pan. You can also cook double the amount of potatoes like in the foil method, then place metal pan with meatloaf on top (some people, like me, do not love cooking with foil for health reasons).

If using the foil method, you can double both the meatloaf and the potatoes. Pressure cooking time remains the same.

Can I add the carrots?

If you would like to add some vegetables to make it a complete meal, I recommend to add baby carrots or simply sliced chunks of carrots around the foil bowl with the meatloaf. I find other vegetables will come out extremely overcooked during the 25 minutes of pressure cooking.

Can I freeze the leftovers?

You can freeze the meatloaf in an airtight container or freezer safe bag for up to 3 months. I recommend to freeze it whole, so it stays juicy. As a general rule of thumb, potatoes do not freeze well as they change their texture.

Can I make this meatloaf in the slow cooker?

I think so. You can follow my slow cooker turkey meatloaf recipe instructions. You can also add cubed potatoes with 1 cup of water to the bottom of slow cooker and then place meatloaf mixture in parchment paper or foil on top.

How to Make Meatloaf in Stackable Pans

  • Bottom pan: Add potatoes and water.

  • With a mitt on, remove pans from Instant Pot on a towel and open them.
  • Bottom pan with potatoes: Drain the water and add butter, milk, salt and pepper. Mash.
  • Top pan with meatloaf: Squirt some ketchup on top and spread with a mini spatula or brush. Slice meatloaf right in a pan and serve!

How to Make Meatloaf Using Foil

  • Potatoes: Place potatoes and water at the bottom of Instant Pot. Then put trivet that came with Instant Pot on top. Doesn't matter if it has handles or not.
  • Meatloaf: And then shape meat mixture into a meatloaf on top of double layered foil and then shape foil into a bowl. Place on a trivet.
  • Close the lid, set pressure vent to Sealing and press Pressure Cook on High or Manual button for 25 minutes. After release the pressure immediately.
  • Drain and mash potatoes with butter, milk, salt and pepper. Glaze loaf with ketchup. Slice and enjoy!

  • Cook spaghetti squash: Set each spaghetti squash half cut side down on a parchment lined baking sheet. Use a fork and randomly pierce the skin. Bake for 30 minutes.

Tips for Best Results

Here are my tried and true tips on how to get chicken and spaghetti squash on the table with beautiful presentation and loads of flavor.

  • Don’t cook spaghetti squash whole: I don’t recommend to cook spaghetti squash whole or make Instant Pot spaghetti squash when making squash boats. They’ll turn out too watery and be harder to cut.
  • Don’t over bake the squash: I cook small ones for 30 minutes, medium ones might need 35-40 minutes. Remove when the skin is glossy and flesh is not watery inside.
  • Roast spaghetti squash in advance: You can speed up this dinner by roasting the spaghetti squash up to 1 day ahead, shred strands, and reheat when ready.
  • Swap for other winter squash: Butternut squash and acorn squash are a bit sweeter but would be great for this recipe. Here’s how to roast butternut squash halves or make acorn squash halves, then add the same filling.
  • Make a skillet meal instead: If you’d like to skip the boats and serve it like a plate of pasta simply scoop the spaghetti strands out, add them to the skillet with butter chicken, and gently stir to combine.
  • Use rotisserie chicken: Add shredded rotisserie chicken to the skillet and cook it in sauce for less time, about 5-7 minutes.

A lot of times I’ll serve this chicken spaghetti squash recipe on its own and garnish with fresh parsley, a small or medium sized squash makes the perfect individual serving that’s quite filling.

For a complete meal for those who want more carbs, I like to serve with Instant Pot brown rice, Instant Pot jasmine rice or Instant Pot long grain white rice, with a side of naan bread of course.

  • Preheat oven to 375 degrees F. Cut squash in half, scoop out the seeds and place cut side down on a baking sheet lined with parchment paper. Poke skin randomly with a fork and bake for 30 minutes.
  • Meanwhile, preheat large skillet on medium heat and swirl oil to coat. Add garlic and onion; sauté for 3 minutes, stirring occasionally. Add garam masala, ginger, curry powder, salt and pepper; sauté for 30 seconds, stirring frequently.
  • Add tomato paste and mix it well with onion and spices. Add coconut milk and stir until combined. Now add chicken, stir, cover and cook for 15 minutes. Turn off heat and set aside.
  • Remove cooked squash from the oven, its skin should be shiny and strands easily separate with a fork. Flip it and let cool for about 10 minutes. To make “spaghetti”, hold one squash half at a time, wearing an oven mitt, and separate the flesh into strands with a fork.
  • Divide butter chicken mixture evenly among the squash halves, return to the oven and bake for another 10 minutes.
  • Serve warm with a salad or veggies of choice.

Notes

  • Store: Refrigerate in an airtight container for up to 3-5 days. Do not freeze.
  • You can use 3 medium squash about 2 lbs each as I understand small spaghetti squash is hard to come across. I bought mine at the farmers market.
  • I didn’t have fresh ginger on hand but you can definitely replace dried ginger with about 1-2” piece of grated fresh ginger.

I came up with my own version of the best healthy fried chicken! Just ask my kids. The breading for the chicken is made with healthy ingredients. The result is the most crispy oven fried chicken ever!

Even though I’ve spent tons of time in the kitchen making almond flour recipes for baked goods, who knew it would work amazing for savory uses too. In fact, I’ve used it for healthy chicken nuggets as well. It’s so delicious!

Why You’ll Love This Recipe

  • Easy: You do not have to marinate chicken in buttermilk beforehand. It’s simple enough for a weeknight dinner.
  • Wholesome ingredients: Instead of traditional breadcrumbs and cereal I use a mix of coconut flakes and almonds. So, it’s also gluten-free chicken recipe!
  • It’s much lower in fat: Instead of deep frying the chicken, we bake it in the oven.
  • Crispy coating: Using cooking spray ensures the crispy coating without deep frying.

Ingredients for Healthy Fried Chicken

  • Chicken: Chicken drumsticks or bone-in chicken thighs. Both should have skin on, so the breading sticks. If using both, make sure to check on doneness of each kind and one might have to be removed sooner than the other from the oven.
  • Coconut flakes: For this recipe, it is important to use short coconut flakes because they stick to the chicken better. If you have long coconut flakes, just give them a few pulses in a blender or food processor.
  • Almond flour: Almond flour is made with blanched almonds, where as almond meal is made with skin-on almonds. I tested both in this recipe and noticed no changes in taste or crispiness of healthy fried chicken.
  • Spices: Garlic powder, dried oregano, salt and pepper. You can also use my all-purpose seasoning instead.
  • Eggs: Act as “a glue” for coating. You can try to dip chicken into buttermilk or milk to make an egg-free fried chicken.

How to Make Healthy Fried Chicken

  • Prepare for baking: Preheat the oven to 425 degrees F. Place a wire rack on top of a baking sheet lined with parchment paper or a silicone baking mat. Make sure to spray the wire rack lightly with cooking spray or brush with oil.
  • Form dredging station: Mix coconut flakes, almond meal or flour, garlic powder, oregano, salt and pepper in a bowl and set aside. In another bowl, whisk the eggs with a fork and set aside.

  • Dredge the chicken: First, dip a drumstick in the egg mixture, then dredge the drumstick in the coating. Repeat this process one more time! Place breaded chicken in a single layer on a wire rack.
  • Fry” chicken in the oven: Bake for 40-45 minutes. The coating will become crispy brown. But don’t worry, it will not burn!
  • Enjoy: Serve immediately for the best oven fried chicken ever!

How Do I Know When my Fried Chicken Is Done?

How long to bake healthy fried chicken in the oven is a very valid question, especially since it is bone in chicken. The best way to tell if your chicken is ready is by using an accurate digital internal meat thermometer.

Insert thermometer into the thickest part of chicken close to the bone but not touching it. Your chicken is ready when thermometer registers 165 F.

Tips for Best Results

There are a few instructions you must follow for crispy chicken. Don’t skip!

  • Dredge twice: Dip the chicken in the egg mixture, then in coating and repeat one more time. It creates a thicker, crispy crust.
  • Be sure to use short coconut flakes: If you have long coconut flakes, pulse them in a blender or food processor. They will mix with almond flour, sticking to the coating well this way.
  • Bake on a wire rack: To ensure that heat circulates around coated chicken, baking it evenly on all sides and making the breading crispy. Plus you won’t have to flip the chicken.
  • Oil the rack: You have to spray even a non-stick wire rack with cooking spray or brush with an oiled brush to avoid crispy coating sticking to it when you remove cooked chicken.
  • Remove carefully: Once chicken is baked, don’t just grab it off the rack. You risk leaving a chunk of crispy coating behind. Instead, let the chicken cool for a few minutes. Using a butter knife or spatula, push the chicken off from underneath the rack. Crispy coating in every bite guaranteed!
  • If chicken starts browning too much: If your chicken looks too dark but isn’t cooked inside, cover it loosely with tin foil. It will prevent it from burning and continue to cook through.
  • Make chicken spicy: For a heat kick, add a pinch of cayenne pepper, chili powder or paprika to the dry coating mix. You might also like this cajun chicken recipe.

How to Store and Reheat

Store: Leftover healthy fried chicken can be refrigerated in an airtight container for up to 2-3 days. I recommend to line the bottom of a container and top of chicken with double layer of paper towel to soak up the moisture.

Unfortunately, the chicken will not be quite as “crispy” when reheated.

Reheat: To reheat fried chicken, my best advice would be to use an air fryer, if you have one. Here is a quick tutorial how to reheat chicken in air fryer.

To reheat in the oven, place chicken pieces on a baking sheet and bake at 350 F until heated through. You might regain some of the crispness as well.

Freeze: Bake and cool chicken completely. Wrap each chicken piece in foil, then place in a resealable Ziploc bag and freeze for up to 3 months. Thaw chicken in the refrigerator overnight.

FAQs

Can I use boneless chicken breast or chicken thighs?

I do not recommend using boneless chicken as it will come out dry. Try air fryer chicken tenders with panko breadcrumbs instead!

What can I substitute coconut flakes with?

Unfortunately there are no good substitutes. Using all almond flour and baking it for such long time will burn the coating before chicken is cooked through. You have to use both coconut flakes and almonds.

Can I use breadcrumbs?

Sure. You can use the same breading I use to make chicken tenders in air fryer. Bake them at 425 F for 22-30 minutes. Just watch closely as all ovens vary.

Why is my healthy fried chicken not crispy?

Usually moisture is the culprit or low oven temperature. Be sure to follow the recipe for teh coating, pat dry chicken before dredging, then bake it on the wire rack in preheated to 425 F oven. Also all ovens vary, so you might have to cook it a bit longer to crisp up.

Can I make it in air fryer?

Yes. To cook fried chicken in air fryer, cook it in 2-3 batches at 400 F for 22-24 minutes.

I’m not going to pretend it’s your next 30 minute dinner idea, but chicken lasagna roll ups are quite easy. That’s why if 12 roll ups is too much, just freeze the leftovers and save time. Plus, most lasagna pasta comes in a package of 12.

Lasagna roll ups turn a layered dinner into individual servings with just as much flavor. The filling is rolled into each pasta sheet, then topped with sauce and bubbly cheese. They’re fun, bake faster, and easier to serve!

Here’s a quick overview of what you’ll need to make these fun chicken lasagna roll ups.

Cooked chicken, spinach, tomato sauce, milk, flour, mozzarella cheese, artichokes, onion, oil, garlic, lasagna noodles, salt and pepper.
  • Lasagna noodles: You can choose from regular, whole wheat or brown rice pasta.
  • Chicken: I often use Instant Pot shredded chicken breast. You can also use pan fried chicken breast or slow cooked chicken breast, or store bought rotisserie chicken can really save time but I would add less salt to the sauce for that option.
  • Artichoke hearts: I used canned artichokes in water. If they are packed in oil be sure to drain well. Frozen artichokes work too, but thaw first.
  • Spinach: I recommend fresh baby spinach. You can use frozen spinach, allow it to thaw and squeeze all the excess liquid.
  • Aromatics: Onion and freshly minced garlic help make the sauce rich and flavorful.
  • Flour: Added to thicken the sauce. Regular, whole wheat or gluten-free flour can be used.
  • Milk: Use your milk of choice, regular or plant based.
  • Tomato sauce: I used plain tomato sauce from a can. You can also add marinara sauce or another pasta sauce you like.
  • Mozzarella cheese: I love mozzarella cheese for this dish, but cheddar cheese works well too.
  • Spices: Salt and pepper.
  • Oil: Use a neutral oil like avocado oil or olive oil to sauté aromatics.

How to Make Chicken Lasagna Roll Ups

This chicken lasagna roll ups recipe has a few steps to it, but I promise it’s easy! Here’s a quick overview complete with pictures.

Step by step process how to boil lasagna noodles and start making the sauce.
  • Cook lasagna noodles: Follow package instructions and cook lasagna noodles al dente. Drain, carefully lay noodles flat on parchment paper, and cover with a towel. Set aside.
  • Make sauce base: Heat a large skillet and coat with oil. Sauté garlic and onion on medium heat for 3-4 minutes, then add flour and stir to combine.
  • Finish the sauce: Add milk, salt, and pepper to the skillet. Stir, bring to a light boil then simmer on low until sauce has thickened.

  • Add chicken and artichokes: Add artichokes and shredded chicken to the sauce and stir. Bring to a boil, reduce heat and simmer for 2-3 minutes uncovered.
  • Stir in spinach: Turn off heat, add spinach, and stir to combine.
  • Prep: Preheat your oven to 350 F. Use a spatula to evenly spread 1 cup of tomato sauce over the bottom of a large baking dish. Set aside.

  • Add filling mixture to lasagna noodles: Scoop 1/3 cup of chicken artichoke mixture onto one end of each pasta sheet, then sprinkle with 1 tablespoon of cheese. Repeat with remaining pasta and filling.
  • Roll: Starting with the filled end, carefully roll each chicken lasagna roll. Place the roll, seam-side down, tightly in the prepared baking dish. I had 2 rows of 6 rolls each.
  • Add toppings: Pour remaining tomato sauce and cheese on top, distributing evenly among all rolls.
  • Bake: Leave the dish uncovered and bake for 30 minutes. Then let them rest covered for 10 minutes, serve hot and enjoy!

Tips for Best Results

Here are some pro tips for the best chicken lasagna rolls.

  • Don’t overcook lasagna noodles: Boil lasagna sheets until al dente, even slightly undercooked is OK. They will continue to cook in the oven and you don’t want them mushy!
  • Be cautious with salt: From sauce, to cheese, to chicken, to artichokes, everything has sodium. Taste test the sauce first and then add salt, especially if you use rotisserie chicken.
  • About rolling the noodles: Roll them not too lose so roll-ups fall apart but not too tight so you squeeze out the filling.
  • Don’t skip resting: It’s always good to let Italian recipes rest for a few minutes, the sauce will thicken and the noodles will soak up more sauce. For this recipe, resting also allows your roll ups to firm up a bit.
  • If you have filling leftovers: You can spread leftover filling on the bottom of the dish around the roll-ups, or cook spaghetti, mix with the filling, and enjoy another delicious meal!
  • Using raw chicken: My original recipe called for diced raw chicken. I updated the recipe and shortened the cooking time so you can use pre-cooked chicken or leftover chicken. You can use fresh chicken and cook the sauce for 20 minutes if you’d like.
  • Using alfredo sauce: Make chicken alfredo lasagna rolls using my healthy alfredo sauce. It may curdle during prolonged baking because it’s made with yogurt, therefore bake roll ups for only 15 minutes. Let them stand covered longer, about 15 minutes as well.

Serving Recommendations

I love serving these lasagna roll-ups with a simple green salad or roasted vegetables and crusty bread.

For salads, we love the classics like healthy Caesar salad, a simple butter lettuce salad, or cucumber and tomato salad. Or add more Italian flair with an Italian chopped salad.

Green veggies make a great side dish for lasagna. Sautéed broccoli with tomatoes, oven roasted asparagus, and garlic green beans are super easy to make. But really, the sky is the limit so serve with your favorite seasonal vegetables.

Can I Make Them Ahead of Time?

Up to 2 days ahead: Prepare as per recipe but don’t bake, cover with plastic, and refrigerate for up to 2 days. Let it sit for 30 minutes at room temperature and bake. You may need to bake it 10-15 minutes longer since it’s cold.

As a freezer meal: Assemble, tightly wrap with one layer of plastic, then a few layers of aluminum foil. You can freeze them for up to 3 months, then thaw in the fridge overnight and bake as per instructions adding 15 minutes.

How to Store

Store: Cooled roll ups can be placed in an airtight container and kept in the refrigerator for up to 5 days.

Freeze: Leftover lasagna rollups will keep in the freezer for up to 3 months.

FAQs

Can I omit artichokes?

Sure. You can substitute artichokes with 1 cup cooked chicken, cooked cannellini beans, roasted butternut squash cubes, diced tofu or leave as is.

Should I cover lasagna roll ups while baking?

No. Bake lasagna roll ups uncovered but cover after to rest.

Can I make them vegetarian?

Sure. Substitute chicken with cooked cannellini beans, roasted butternut squash cubes, or diced tofu.

Alternatively, chop up some veggies, cook until soft, and add to the mixture along with the spinach. Try broccoli, cauliflower, zucchini, red peppers, corn or mushrooms. You could even swap kale for spinach.

Can I use oven-ready lasagna noodles?

I’m not sure, I have never tried. I know that oven ready lasagna noodles are much thinner than regular lasagna sheets so you might have trouble rolling them. I have heard that from other readers.

Instant Pot Chicken Fried Rice is quick and easy one pot meal that tastes better than takeout. Not to mention it is healthy and makes great leftovers that entire family enjoys!

This Instant Pot chicken fried rice is a hit in our family every time I make it! It uses very simple ingredients and everything cooks in one pot. Scrambled eggs, rice, vegetables and chicken garnished with soy sauce and green onions. Mmmmmmm.

This is one of those healthy Instant Pot recipes that makes a lot but I like it. When kids get back from school, they are always hungry and ate their lunches. So having chicken fried rice in Instant Pot on Keep Warm function has been a life saver.

Here is everything you need to make this Instant Pot chicken fried rice recipe!

Chicken breasts, brown rice, frozen peas, eggs, green onions, mushrooms, soy sauce, onion, avocado oil.
  • Chicken: Boneless skinless chicken breasts or chicken thighs.
  • Rice: You can use brown rice, long grain white rice, jasmine rice or basmati rice. The only kind I wouldn’t recommend to use is short grain white rice and sushi rice because it will come out mushy.
  • Water: For even more flavor you can use chicken broth. Just be sure to use low sodium one because there is no added salt that you can reduce easily in this recipe. We do need full amount of soy sauce for flavor, and it is usually high in sodium.
  • Veggies: Onion, mushrooms, peas, carrots and green onion.
  • Eggs: A staple in any fried rice recipe.
  • Soy sauce and oil: For frying and seasoning. You can also use gluten-free tamari and any oil you usually use for sauteing.

How to Make Chicken Fried Rice in Instant Pot

Step by step process how to saute the eggs and cook chicken fried rice in instant pot.
  • Make scrambled eggs: Press Saute function and wait until display says Hot. Then cook 6 eggs, stirring after each 2 eggs to make sure they don’t set. Transfer eggs to a bowl. Stuck to the bottom eggs are OK and didn’t cause Burn for me. But please see FAQs if it happens to you.
  • Add vegetables, chicken and rice and do not stir. Flatten rice with spatula, so it cooks evenly. If you forget, not a big deal. Some rice grains on top might be a bit crunchy. But they will finish cooking once stirred and fried rice sits for a bit.
  • Cook: Close the lid, turn pressure vent to Sealing position and press Pressure Cook on High or Manual. Cook chicken fried rice in Instant Pot with brown rice – for 22 minutes, with white rice – for 3 minutes.

  • Release pressure: With brown rice – release pressure using Quick Release method by turning valve to Venting immediately after cooking. With white rice – wait 10 minutes and then release remaining pressure, if any.
  • Add soy sauce, peas, eggs and stir: If there is a little bit of liquid at the bottom, it’s OK. It will get absorbed by rice quickly once you stir and it sits for 5 minutes. Especially if you keep it on Keep Warm mode. If you see chicken pieces are stuck together, just break them gently with spatula.
  • Garnish: Add green onions, give another gentle stir and serve the dish.

Recipe Tip

A few readers have reported that they had to add more soy sauce. All taste buds differ and please feel free to adjust the seasonings to your family’s taste at the end. This is one of Instant Pot recipes that is very forgiving!

Tips for Best Results

  • To cut recipe in half: This Instant Pot chicken fried rice recipe makes 8 generous servings. So, if you don’t want to have leftovers or freeze them, cut all ingredients in half but keep same pressure cooking time.
  • Instant Pot size: You can make chicken fried rice in 6 quart Instant Pot or 8 quart Instant Pot. I think 3 quart Instant Pot would be too small.
  • Rinse rice very well: You need to remove as much starch as possible, so it turns out fluffy and not mushy.
  • Be sure rice is submerged in liquid: It is ideal to have water covering the rice completely, so rice cooks evenly. It’s advisable but not critical.
  • If you stirred by accident: Instant Pot cooks food better when it is layered. And certain order is a must. This is all due to a heating element located at the bottom of the pot. If you stirred by accident, nothing you can do at this point. Just cook it as is and hopefully Burn message won’t come up.
  • If your rice comes out crunchy: Stir, close the lid and let it sit for 20 minutes. It will get there. Also try to add a few more minutes to cooking time next time. Unfortunately, you can’t re-close the lid, cook for extra 2 minutes and say that’s your new cooking time.

Variations

  • Shrimp fried rice: Omit chicken and when fried rice is cooked, add 2-3 cups of small cooked shrimp along with seasonings. I don’t think you even need to thaw it, just close the lid and let it sit along with frozen peas.
  • Vegetable fried rice: Omit chicken. At the end, add chopped bell pepper, more frozen peas and even roasted peanuts to bulk up the Instant Pot fried rice.
  • To use frozen chicken: Add 2 frozen chicken breasts, cook as per instructions, remove and either shred with 2 forks or dice. Return back to the pressure cooker and proceed to next step.
  • To use frozen peas and carrots: No need to thaw them. In this case, skip fresh carrots in the recipe. And just beware once you add frozen vegetables at the end, carrots will be more crunchy, which is totally OK.
  • To use use fresh peas: Add shelled fresh peas at the end.
  • If you do not have toasted sesame oil: It is perfectly fine to omit it. Last time I didn’t have any on hand and Instant Pot chicken fried rice still came out delicious! Add sesame seeds or a splash of extra virgin olive oil, if you wish.

What to Serve Instant Pot Chicken Fried Rice with?

Because this dish is quite filling and high in carbs, my body naturally craves a salad as a side dish to go with it. We had it with Thai cucumber salad, that screamed summer to me, the other night.

Other year-round affordable salads that would go nicely here are Asian chopped salad and butter lettuce salad. Also you can never go wrong with a simple green smoothie.

Can I Make It Ahead of Time?

Sure. To make ahead, you will have to prep some elements of this dish. Most labor intensive part is to chop the chicken and vegetables.

Dice chicken and refrigerate in covered container. You can also slice the mushrooms and chop the onions and carrots and refrigerate in one container together. Chopped green onion can go in another separate container. Scramble the eggs and store them the same way.

All of these ingredients will stay fresh in the refrigerator for up to 48 hours. Then all you have to do is dump and saute, and just cook as per recipe. Huge time saver!

How to Store and Reheat

Store: Cooked rice keeps very well in the fridge and this Instant Pot chicken fried rice makes a lot of food. Refrigerate leftovers in an airtight container for up to 5 days. You can also portion them out in glass meal prep containers for easy grab-and-go meal that you can reheat in a microwave in the same container.

Freeze: Cook, cool and freeze leftovers in an airtight container for up to 3 months. Thaw in the fridge overnight.

Reheat: Reheat in a microwave in 30 seconds intervals after initial 1 minute warm up. Or you can also reheat chicken fried rice in a small pot with a splash of water by simmering on low heat, covered, for about 5 minutes. Check and stir a few times.

FAQs

What if I got a Burn message?

If you got a Burn message, do not panic. It actually doesn’t mean that your food is burning but rather the heating element is sensing some pieces of food stuck to the pot. In many cases you can still make electric pressure cooker to pressurize.

If you’re making fried rice with white rice, time 3 minutes of cook time plus 10 minutes of Natural Release, and then turn valve to Venting. With brown rice, you need to make sure it stays under pressure for 22 minutes.

Again, this issue has never been reported. If you are worried, deglaze the pot with some of the water after cooking the eggs.

What other veggies can I add to Instant Pot chicken fried rice?

You can also add finely chopped broccoli, cauliflower, bell pepper or zucchini if you like firm vegetables. I would add them after the rice cooks, so they are crisp, tender and not mushy.

Can I use ground chicken instead of chicken breasts?

Sure. You will have to saute it before the eggs. Cook ground chicken with a bit of oil, breaking into small pieces, for about 5 minutes. Then proceed with the recipe.

Can I omit mushrooms?

Sure. If you do not love mushrooms or are allergic to them, skip. I recommend to add more soy sauce at the end to compensate for some of the lost umami flavor.

Will frozen peas get actually cooked?

Yes. Fresh peas is one of those vegetables that we can eat raw. Frozen peas are frozen fresh peas. When added at the end of cooking, the residual heat from the fried rice will cook them. I do not like to add peas in the beginning because they come out overcooked and lose their bright green color.
